2 cups milk
4 eggs
1 cup coconut
3/4 cup sugar
1/4 cup butter
1/2 cup biscuit mix
1/2 tsp. vanilla
Put everything but coconut into a blender. Blend for 3 minutes at low speed. Pour into a greased 9″ pie pan. Let stand 5 minutes. Sprinkle top with coconut and bake 30 to 40 minutes, until set.
