Serve this hot and slathered with butter for breakfast, or spread with cream cheese for afternoon tea.
1 cup granulated sugar
1 cup applesauce
1/3 cup oil
2 eggs
3 tablespoons milk
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
1/4 teaspoon nutmeg
1 cup chopped pecans
1/4 cup brown sugar
Grease a 9×5-inch loaf pan.
In large bowl, combine granulated sugar, applesauce, oil, eggs, and milk. Mix well.
In small bowl, combine flour, soda, baking powder, 1/2 teaspoon cinnamon, salt, and nutmeg. Add to applesauce mixture, and beat until well mixed. Stir in 3/4 cup chopped pecans. Pour into pan.
Mix together the brown sugar and remaining 1/2 teaspoon cinnamon and 1/4 cup pecans. Sprinkle over batter.
Bake at 350 degrees F for 1 hour, or until toothpick inserted in center comes out clean. Cover loosely with foil after the first 30 minutes of baking.
Cool in pan 10 minutes; finish cooling on rack.
