4 pounds pork ribs
SAUCE
1/2 cup hoisin sauce
1/2 cup applesauce
1/2 cup garlic chili sauce
1/2 cup ketchup
2 cloves garlic, minced
1 tablespoon minced ginger
2 scallions, chopped
1/4 cup dry sherry
1/4 cup rice wine vinegar
1/4 cup honey
1/2 tablespoon sesame oil
2 teaspoons soy sauce
fresh cracked black pepper
Combine all marinade ingredients and mix throughly. Place ribs in large roasting pan. Pierce meat with fork. Pour sauce over ribs, turning to coat.
Turn ribs meat side down; cover pan with aluminum foil and refrigerate overnight.
Preheat oven to 400 degrees.
Bake ribs, covered, until just tender, about 30 minutes,
Uncover and turn ribs meat side up; bake until ribs are cooked through, basting occasionally, about 35 minutes.
Cut meat between bones to separate ribs and serve.
