A delicious off-the-beaten-track hors d’oeuvre. However; allow ample time for any smokiness from broiling the eggplant to dissipate before your guests arrive. Also an excellent pita bread sandwich spread.
1 large eggplant
1-1/2 tablespoons sesame tahini
3 tablespoons lemon juice
3/4 teaspoon salt
2 cloves garlic, pressed, or 1/4 teaspoon garlic powder
Pierce eggplant and place it, whole, 3 to 4 inches under broiler. Broil it on all sides for a total of 30 minutes. Cool; peel skin from flesh. Put eggplant flesh into a blender with other ingredients and mix at high speed for a couple of minutes. Cool and serve with small pita bread triangles.
