Onions, chives, and cheese enliven this recipe for baked eggs, which appeals to all ages. Serve it with homemade applesauce and sausage. — Red Brook Inn, Old Mystic, Connecticut
6 eggs
1/2 cup sour cream
1 teaspoon white pepper
1 teaspoon chopped onion
1 ounce diced ham
1 teaspoon chopped dried chives
1-1/4 cups grated Havarti cheese, divided
Beat the eggs, then add the sour cream, pepper, onion, ham, chives, and 1 cup of the cheese, stirring to blend (the mixture will be lumpy).
Pour into a greased 8-inch baking dish and bake in a preheated 375˚F oven for 35 minutes. When set, remove from the oven, sprinkle with the remaining 1/4 cup cheese, and return to the oven long enough to melt the cheese topping, about 3 minutes. Serve hot.
