This salt pork spread is a/so excellent on venison steaks.
1 (2-inch) cube salt pork
3 tablespoons chopped fresh parsley
2 cloves fresh garlic, minced, or 1/2 teaspoon garlic powder
4 boneless chuck top blade steaks
On a cutting board, mince the salt pork with a sharp chef’s knife until it becomes pastelike. Add the parsley and garlic and continue to mince, folding and cutting so that the paste turns green (add more parsley if necessary). Place steaks on a broiler pan and spread the tops with the salt pork mixture. Broil steaks; then turn and spread with more of the salt pork and continue broiling until the steaks are of the desired doneness. (The amount of cooking time will vary with the thickness of the steak.)
