2 cups sifted flour
2-1/2 teaspoons baking powder
1/2 teaspoon salt
1/3 cup butter
1 cup sugar
1 teaspoon vanilla
2 eggs
1/2 cup milk
Sift together the flour, baking powder, and salt. Cream the butter until light and gradually add the sugar; beat in the vanilla and eggs alternately with the milk. Beat well. Turn into buttered round 8-inch layer cake pans and bake for 30 minutes in a 350 degree F oven. Put together with Cream Filling and sprinkle with powdered sugar. Serve in pie-shaped pieces.
3/4 cup sugar
1/3 cup flour
1/8 teaspoon salt
2 eggs or 4 egg yolks
2 cups scalded milk
1 teaspoon vanilla
Mix the dry ingredients and gradually add the scalded milk. Cook in a double boiler, stirring constantly until the mixture thickens, about 15 minutes. Add the slightly beaten eggs and cook for 2 or 3 minutes longer. Cool and add the vanilla. If you wish a richer filling, add 2 tablespoons butter.
Variations:
Banana Cream Pie: Put the layers together with cream filling to which has been added one thoroughly mashed banana.
Washington Pie:
Make like Boston Cream Pie, putting the layers together with cherry jam.
