A nice, old-fashioned dessert that is good served a little warm.
1-3/4 cups sifted flour
2-1/2 teaspoons baking powder
a few grains of salt
1/4 cup melted butter
1 cup sugar
1 egg, well beaten
1/2 teaspoon lemon extract
2/3 cup milk
Sift the dry ingredients together 3 times. Beat together the butter, sugar, egg, and lemon extract. Add the flour and milk alternately, beating well after each addition; pour into a buttered 8×8-inch pan and bake in a 375 degree F oven for 30 to 40 minutes. Vanilla sauce, lemon sauce, or strawberry sauce go well with Cottage Pudding.
