The cheese and cranberry combination creates an unusually delicious flavor that is difficult to identify. Serve with lunch or dinner. –Stafford’s in the Field, Chocorua, New Hampshire
2 cups flour
1 cup sugar
1-1/2 teaspoons baking soda
1/2 teaspoon salt
2 teaspoons grated orange rind
2 tablespoons shortening
1-1/2 cups shredded cheddar cheese
1 egg, beaten
1 cup cranberries, halved
1/2 cup chopped walnuts
Juice of 1 orange, plus water to make 3/4 cup
Combine first 5 ingredients, then cut in shortening. Mix remaining ingredients together and combine with dry mixture. Turn into greased 9×5-inch loaf pan and bake at 350 degrees F for 1 hour. Let cool before slicing.
