My husband was recently diagnosed with type two diabetes. In my research to help him control this common diagnosis, I found this recipe on another site and gave it a try. He thought they were quite good.
2 teaspoons liquid sweetener
1 tablespoon butter
1/2 cup of peanut butter
2 eggs, slightly beaten
1/2 skim milk
1 cup of flour
1/4 teaspoon of baking soda
Melt shortening and peanut butter.
Add sweetener and eggs; blend well.
Add flour alernately with milk which baking soda has been added. Mix well.
Drop by the teaspoon on an ungreased
cookie sheet. Bake at 375 degrees for 15 minutes.
