4 boneless, skinless chicken breast halves
2 egg whites
2 teaspoons cornstarch
juice of 1 lemon
1 cup bread crumbs
1 cup grated Parmesan cheese
1 tablespoon Dom DeLuise Italian Blend
1 tablespoon chopped fresh parsley
3 tablespoons olive oil
Preheat oven to 400 degrees.
Pound chicken breast to flatten. Whisk egg whites, cornstarch and lemon juice.
Combine bread crumbs, cheese, Dom Italian Blend and parsley.
Carefully dip chicken in egg white mixture then coat by turning in bread crumb mixture.
Saute chicken in olive oil in a large skillet over medium heat for about 3 minutes per side, carefully turning. Transfer the skillet to the oven and finish by roasting chicken 4 to 6 minutes or until cooked through — only till pink is gone
