1 cup Self-Rising — Flour; sifted
1 cup Self-Rising — Corn Meal Mix
1 cup Grated sharp Cheddar cheese — (4-ounces)
1 teaspoon Dry mustard
1 Egg
1 cup Milk
1/4 cup Vegetable oil or melted shortening
Preheat oven to 230C (450F).
Grease muffin cups.
Combine flour, corn meal, cheese, and dry mustard in medium bowl.
Beat egg in separate bowl; stir in milk and oil.
Add liquid mixture to dry ingredients; blend thoroughly.
Spoon batter into prepared muffin cups, filling each 2/3 full.
Bake for 18 to 20 minutes or until golden brown.
