I recently went on a trip to my husbands family in Morocco, and I had this at his mother’s house it was great. This is something great to serve as an appetizer or just a snack like we did.
4 diced potatoes
2 eggs
3 tablespoons of chopped parsley and cilantro
4 cloves garlic, crushed
1 tablespoon cumin
1/4 teaspoon pepper
1/4 teaspoon salt
flour
Wash potatoes in salted water, then mash with fork or a masher. Place potato puree in bowl, add 1 egg, parsley, cilantro, garlic, cumin, salt, and pepper. Mix well. make balls out of the mixture, and flatten lightly with fingers. Dip one at a time in one beaten egg, then dip into flour. Shake off excess flour if needed. Fry in hot oil, brown on both sides.
