Keeping a spoonful of hungry teenagers fed and happy requires skill, speed, and imagination. These cookies are just one of the many treats Mabel would prepare in great quantity for the students at Putney School.
2 cups sugar
1/2 cup milk
1/2 cup butter or margarine
1/2 cup cocoa
3 cups rolled oats
1 teaspoon vanilla
Coconut, nuts, or sunflower seeds (optional)
Mix sugar, milk, butter, and cocoa together, and cook for 1 minute after butter melts. Add remaining ingredients and mix well. Drop by spoonfuls onto waxed paper. Let cool. Store in covered container.
Variation: Using the same recipe, leave out cocoa and substitute light brown sugar. Boil 3 minutes rather than 1 minute. Add oatmeal and raisins, and drop as above.
