left over turkey (cold)
sea salt to taste
black pepper (fresh ground) to taste
garlic powder
flour (all purpose)
¼-pound butter
Mix sea salt, black pepper, garlic and flour together. Amounts will vary according to
the amount of left over turkey that is to be fried. Season to taste. Coat turkey with flour
mixture. Using a fork, press the flour into the pieces of turkey. Let the turkey meat
separate slightly so that the flour gets down into the grain of the meat. Melt 2-
tablespoons butter in heavy skillet on medium heat. Make sure there is plenty of butter
in the skillet. The flour will soak up a lot. Fry turkey until golden brown and crispy on
the outside. Remove from skillet. Scrap the browned bits of flour and butter from the skillet. A rubber spatula
works well but it will melt if skillet is to hot. Pour it over the all ready browned turkey.
If you don’t clean out the browned bits, the next batch you brown will taste burnt.
