2 large spanish onions
2 cups well shaken buttermilk
4 tsp salt
2 tsp black pepper
2 cups all purpose flour
4 to 6 cups veg shortening
cut onions crosswise – 1/2″ thick
and separate into rings – reserve smallest rings for another dish…
Stir together milk, 2 tsp salt and 1 tsp pepper – gently stir in onions. Let stand – occasionally turn to coat.
Drain in colander.
Whisk together flour and remaining salt and pepper.
Dredge onions a few time in the flour – shaking off excess – and arrange in 12 layer on cookie sheets. let onions stand 15 minutes for batter to set.
Preheat oven to 200deg
deep fry – keep warm in oven…
