These tasty, attractive small pies are also nice for brunch or as a side dish to a main meal.
12 large oysters
Salt and pepper to taste
1 recipe pie pastry
2 tablespoons butter
Sprinkle oysters with salt and pepper. Roll pastry very thin. Cut into 2-inch circles with a round cookie cutter or rim of a glass. Place a seasoned oyster and very small dab of butter on one half of the pastry circle, fold over other half, and press edges together to seal in juices. Fry a few at a time in deep hot fat (375 degrees F) until brown.
