These chewy bars, spiked with ginger and the crunch of nuts, are a welcome addition to any sweet table.
3/4 cup all-purpose flour
1/4 teaspoon baking powder
1/4 cup (1/2 stick) unsalted butter
1 cup sugar
2 large eggs
1 cup chopped walnuts
1 cup chopped dates
3 tablespoons chopped crystallized ginger
Adjust rack to lower third of oven and preheat oven to 350 degrees F. Grease and flour the bottom of a 9×9-inch baking pan; line pan with baking parchment or waxed paper.
Whisk the flour and the baking powder in a small bowl to combine. In a larger bowl, beat the butter and sugar until creamy. Add the eggs and beat just until blended. Stir in the flour mixture, then the nuts, dates, and ginger.
Bake for 30 minutes, or until light golden on top. Let cool in pan for 5 minutes, then invert immediately onto a sheet of baking parchment or waxed paper. Lift off the paper used during baking. While warm, cut into uniform bars with a sharp knife.
