1/2-pound sliced bottom mushrooms
2 tablespoons finely minced shallots (onions can be substituted)
1 to 2 clove finely minced garlic
2 tablespoons olive oil or sweet(unsalted)butter
salt and pepper, to taste
1 to 2 springs of thyme
1 tablespoon brandy (optional)
1/2 cup white wine
1 sheet of foil measuring about 20 X 20-inches SQ
In a bowl, toss all (but the wine and brandy), ingredients together
Spoon the sliced mushrooms onto the foil and fold over (leaving one of the sides open)
Carefully pour the liquid into the foil pouch and place on a hot grill for about 30 minutes or up to 45 minutes. Can also be baked in a 400°F oven for about 40 minutes.
