This was my mom’s recipe, she always made these while I was growing up,now I make them for my family.They are soft and just plain yummy!!
1 stick unsalted butter (soften)
1 large egg (beaten slightly)
1 cup sugar
1 cup (grated) zucchini
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon salt
1/2 cup chopped walnuts
1/2 cup golden raisins(optional)
Beat butter and sugar until creamy, blend in the slightly beaten egg. In a medium bowl, mix flour, baking soda, and spices together. Add to wet mixture. Stir in the zucchini and chopped walnuts.
On a lightly sprayed cookie sheet, using a tablespoon or small scoop, 2inches apart
Bake at 350 degrees 12-15 minutes. Cool on rack.
