8 chicken quarters
BRINE:
1 qt brewed tea-double strength
1 lemon – zested quartered
1 cup sugar
1/2 cup kosher salt
Crust:
2 cups all purp flour
2 cups masa harina
2 tbsp old bay seasoning
1 tbsp chili powder
salt and peper to taste
2 cups buttermilk
1 qt veg oil
Mix brine – simmer 5 minutes until sygar and salt dissolve
Add 1 quart ice water – submerge chicken for 48 hours – refrigerate
Drain
Mix flour, harina, old bay and seasonings in large bowl.
Soak chicken in buttermilk – half hour -drain
coat chicken in flour mixture.
let rest 30 minutes
heat oil to 325deg. – fry – 15 minutes
cool – can be refrigerated overnight…
