A most versatile dish, the ring may be served with grilled ham and filled with a vegetable, peas, creamed mushrooms, or creamed carrots. Or fill the ring with creamed chicken or fish and surround with a vegetable.
1 cup macaroni
2 teaspoons onion juice
1 and 1/2 tablespoons chopped parsley
2 tablespoons chopped green pepper
1 teaspoon salt
1/2 cup grated cheese
1 cuplightcream
1 cup soft breadcrumbs
1/4 cup melted butter
3 eggs, well beaten
Break the macaroni in pieces and cook it in boiling salted water until nearly tender (about 7 minutes). Mix the drained macaroni with the other ingredients. Pour into a well buttered 2-quart ring mold (the mixture will rise during the cooking because of the eggs). Bake in a 350 degrees F oven for 45 minutes, or until firm.
