Not at all mundane muffins – these are sweet and spicy with plump morsels of mandarin orange and a buttery sugar topping. –Seward Inn, Rockport. Massachusetts
1-1/2 cups sifted flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/4 teaspoon allspice
1/2 cup melted margarine or butter
1/2 cup milk
1 egg, slightly beaten
1 can (11 ounces) mandarin oranges, well drained
Melted butter or margarine
1/2 cup sugar combined with 1 teaspoon cinnamon
Sift together first 6 ingredients. Combine 1/4 cup cooled melted margarine, milk, and egg, and add all at once to flour mixture. Stir until flour is moist. Add mandarin oranges and mix lightly. Pour batter into well-greased muffin tins and bake in preheated 400 degrees F oven for 15-20 minutes. Remove from tins and while hot dip tops of muffins in melted butter and roll in cinnamon-sugar mixture.
