4 cucumbers, unpeeled
1 red onion, halved and thinly sliced
1/4 cup chopped fresh parsley
1 cup water
1/2 cup rice vinegar
1/2 cup cider vinegar
1/4 cup sugar
1 tsp salt
1/2 tsp black pepper
Score cucumbers lengthwise with tines of fork; slice thinly. Combine cucumbers, onion and parsley in non reactive bowl.
In small mixing bowl combine water, rice vinegar, cider vinegar, sugar, salt and pepper. Mix well. Pour over vegetables. Stir to coat. Cover and refrigerate 2 hours before serving.
