This meat loaf may be made with beef, or with a mixture of beef, veal, and pork.
2 pounds ground meat
4 slices bread, crumbled
1 onion, minced
4 sprigs parsley, minced
1 clove garlic, crushed
2 eggs
1 cup chili sauce or tomato juice
1 tablespoon salt
freshly ground black pepper
2 strips bacon
tomato catsup (optional)
Mix all the ingredients together (except the bacon and catsup) until thoroughly blended. Pack into a greased loaf pan. For a crisp crust, spread tomato catsup over surface of loaf. Or, if you like a crisp surface all over, pat into a loaf-shaped roll and place on a cookie sheet. Arrange the bacon strips over the meat and bake in a 375 degrees F oven for about 45 minutes (if you use pork, allow an hour). The loaf may be served with hot tomato, brown mushroom, or sour cream and dill sauce.
