1 cup shortening
1 cup sugar
1 cup molasses
1/2 cup coffee
2-1/2 to 4 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons cinnamon
1 teaspoon ginger
1/2 teaspoon salt
Preheat oven to 350 degrees F. Mix ingredients in order, using as much flour as you want to adjust the thickness of the cookie. Drop by tablespoonfuls onto a baking sheet. Bake for 5 to 8 minutes. (Optional: Add 1/2 cup dates, raisins, or nuts.)
