A quick, easy version of the famous Parker House Roll.
2 packages active dry yeast
1/4 cup lukewarm water
1-1/4 cups milk
3 tablespoons sugar
2 tablespoons butter
3/4 teaspoon salt
4 cups sifted all-purpose flour
Dissolve the yeast in the lukewarm water. Place the milk, sugar, butter and salt in a pan. Heat until lukewarm. Add the yeast and flour and mix well. Place in a greased bowl and brush the top with melted butter. Let rise for 15 minutes.
Turn out on to a floured board. Pat until 34 inch thick. Cut into rounds with a floured biscuit cutter. Fold the rolls over and press the edges together lightly. Place on a greased baking sheet. Let rise for 15 minutes.
Bake in a 425 degrees F oven for 10 minutes. Brush with melted butter.
