This one-dish meal is easy to prepare, and the pork chops are very tender. All in all, definitely a hit.
6 or more pork chops
1 package (3 ounces) Shake ‘n Bake for Pork
1/2 cup chopped onion
1 can (6 ounces) sliced mushrooms, drained
2 cups cooked rice
2 cups chicken broth
1/2 teaspoon salt
1 tomato, sliced
Preheat the oven to 425 degrees F. Coat the pork chops with the Shake ‘n Bake. Place in a large Dutch oven or ovenproof skillet. Bake for 35 minutes.
Remove the chops from the Dutch oven and set aside. Place the Dutch oven over medium heat and add the onion and mushrooms. Saute in the drippings until limp, about 4 minutes. Stir in the rice, chicken broth, and salt. Arrange the pork chops over the rice. Place the tomatoes on the chops. Sprinkle any remaining Shake ‘n Bake on top and sprinkle with a little water. Return the chops to the oven and bake for about 15 minutes.
