One of the inn’s best-loved breakfast recipes is this one for pancakes with a twist. Serve with powdered sugar and hot maple syrup, accompanied by sliced bananas, strawberries, or blueberries, and plump sausages. –The William Seward Inn, Westfield, New York
6 eggs
3/4 teaspoon salt
1/2 cup sugar
1 cup flour
1 cup milk
1/4 cup orange juice
3 tablespoons butter, melted
Preheat oven to 450° F. Beat together the eggs, salt, and sugar. Add the flour and beat again. Add the milk, orange juice, and butter and beat again. Pour about 1/2 cup of the batter into each of 8 well-greased 6-ounce ramekins. (The inn recommends spraying the ramekins with vegetable cooking spray.) Place in the oven on the center rack and bake 18-20 minutes or until puffy and lightly browned.
