1 head broccoli or 2 packages frozen broccoli
water
lemon juice
salt, pepper, and mace
1 tablespoon butter
3 tablespoons sweet or sour cream
If fresh broccoli is used, clean it and cut up the stems. Cook the broccoli in a large covered saucepan in a small amount of water with the butter, lemon juice, and seasonings until almost tender. Most of the liquid will have boiled away. Puree the broccoli, mixing it with the cream and lemon juice, taste for seasoning, return to the saucepan to reheat, and serve. (This puree is sometimes piped through a pastry tube to form a ring around creamed chicken or fish.)
