This recipe came from my best friend and I fishing on the Mississippi River. I like it not only because of the memories it brings back but also because it is down-right tasty. This is great for cookouts.

This recipe came from my best friend and I fishing on the Mississippi River. I like it not only because of the memories it brings back but also because it is down-right tasty. This is great for cookouts.
2 or more pounds of potatoes sliced and or diced, I like to leave the peels on
1 to 2 onions, cut up large chunks
1 to 3 carrots cut in large chunks, optional
1 stick butter
garlic powder, to taste
salt and pepper, to taste
Combine all ingredients and wrap in heavy duty foil, 3 or 4 layers may be required. Place in grill or to the edge of campfire, turning carefully every 15 to 20 minutes. Done in 30-45 munites, grilling takes a little longer.
Note: You can add any veggies you wish.
