Sauerkraut makes a delicious soup to serve with sausages or roast meat, or as a complete meal in itself.
3 tablespoons butter
2 onions, peeled and sliced
2 tablespoons flour
1/4 cup tomato puree
5 cups beef stock
3 cups sauerkraut
2 tablespoons chopped parsley
Salt and pepper to taste
Chopped parsley
Melt butter in soup kettle. Sauté onions until tender. Sprinkle with flour, and stir in tomato puree until mixture is smooth. Add stock, sauerkraut, and parsley. Bring to a boil, reduce heat, cover, and simmer 30 minutes. Season with salt and pepper. Garnish with additional chopped parsley.
