1 tablespoon cardamom pods
1 tablespoons coriander seeds
2 teaspoons whole, dried Szechuan peppers
4 star anise pods
2 tablespoons fennel seeds
2 teaspoons whole cloves
1 2-inch cinnamon stick
2 teaspoons kosher or sea salt
1 teaspoon whole black peppercorns
In a small glass jar, layer ingredients. Attach a tag with instructions: Place mix into a spice grinder or mortar-and-pestle and grind finely. Store in a separate glass jar.
