10 oz bag of spinach
1 1/2 tbsp canola
3 tbsp bread crumbs
2 tbsp wheat germ
3 egg whites
3 whole eggs – large
1/2 cup crumbled feta
1/2 cup non-fat milk
1 cup low fat ricotta
2 cloves crushed garlic
1/2 cup diced tomatoes
1 tsp salt
pepper
pinch of nutmeg
350 deg oven
wilt spinach – squeeze out liquid and chop
Lightly oil 9″ pie plate – with canola. Sprinkle with crumbs and wheat germ. In a bowl beat remaining ingredients together – add spinach lastly.
Pour into pie pan – bake 35 minutes or until top is slightly puffed
Let stand 10 minutes before slicing
