Refreshingly spring-like!
1 small head iceberg lettuce
1 medium-size ripe avocado, peeled and sliced
3 oranges, peeled and sectioned
1 grapefruit, peeled and sectioned
1 small red onion, sliced paper-thin and separated into rings
Celery Seed Dressing
Line six small salad bowls (preferably glass) with lettuce leaves; break the remaining lettuce into bite-size pieces, dividing among the bowls. Arrange avocado slices, orange sections, grapefruit sections and onion rings on top of the lettuce in each bowl. Sprinkle each with about 1 tablespoon of Celery Seed Dressing and pass extra dressing when serving the salads.
1 teaspoon grated onion
1/2 teaspoon salt
1/2 teaspoon dry mustard
1/2 teaspoon paprika
1/2 teaspoon celery seed
1/2 cup salad oil
2 tablespoons honey
3 tablespoons vinegar
Combine all the ingredients in a jar with a tight-fitting lid and shake until well blended.
