Golden brown and nicely shaped, this tasty bread is ideal not only for teatime but also for breakfast or brunch. — The Forest–A Country Inn, Intervale, New Hampshire
1-1/4 cups sugar, divided
1/2 cup shortening
1/2 cup milk
2 eggs
1-1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
grated rind and juice of 1 medium-size lemon
In a large bowl, cream together 1 cup of the sugar and the shortening. Beat in the milk and eggs. Stir in the flour, baking powder, salt, and lemon rind.
Pour into a greased 8-1/2×4-1/2-inch loaf pan. Bake in a preheated 350 degree oven for 30 to 40 minutes. Mix the remaining 1/4 cup sugar with the lemon juice and spoon over the bread while it is still warm.
