Light and delicate bran muffins with an appealing orange flavor. They freeze well, too, if you ever have any left over. –Weld Inn, Weld, Maine
2 eggs, slightly beaten
1-1/2 cups orange juice
1/4 cup vegetable oil
2 cups raisin bran cereal
2-1/2 cups flour
1/2 cup sugar
2-1/2 teaspoons baking powder
1/2 teaspoon salt
Combine eggs, orange juice, oil, and cereal. Sift together flour, sugar, baking powder, and salt. Add all at once to liquid ingredients and stir just until moistened. Pour into greased muffin tins and bake at 375 degrees F for 20-25 minutes.
