Digital Exclusive: Foraging Mushrooms with New Hampshire Chef Evan Mallett

Evan Mallett, the longtime chef-owner of the Black Trumpet in Portsmouth, New Hampshire, named his acclaimed restaurant after a particularly delicious mushroom he found while foraging. His connection to local food sources inspires the offerings at the Black Trumpet, located in a historic building at 29 Ceres Street. Its menu changes with the seasons and regularly features ingredients sourced from New Hampshire farmers and culinary makers. Mallett is a four-time James Beard semifinalist for Best Chef, Northeast, most recently in 2017. He sits on the boards of Chefs Collaborative and Slow Food Seacoast and is one of the founders of the Heirloom Harvest Project, an initiative that brings together farmers, chefs, and educators to identify and restore a food system native to the greater New Hampshire Seacoast.
