A huge hit! Kids love having their own mini loaves, and the basting helps keep the top from getting too crusty. Especially good with mashed potatoes and buttered carrots.
Meat Loaves
1 pound lean ground beef
1 egg, lightly beaten
1/4 cup fine dry bread crumbs or cornflake crumbs
1 tablespoon dried parsley
1/4 cup water
2 tablespoons chopped onion
2 tablespoons prepared horseradish
1 teaspoon salt
1/8 teaspoon pepper
Sauce
1/2 cup chili sauce
3 tablespoons ketchup
1 teaspoon Worcestershire sauce
1/2 teaspoon dry mustard
Dash Tabasco sauce
Preheat the oven to 350 degrees F. Grease a shallow baking pan.
Combine all the ingredients for the meat loaves. Mix well and shape into four oblong loaves. Place these in the baking pan; do not allow them to touch. Combine the sauce ingredients and spread over the tops and sides of the loaves. Bake for about 45 minutes, basting the loaves two or three times with the drippings that accumulate.
