Lovely and light. If there are any leftover pancakes, freeze them, as Helen does, after they are thoroughly cooled; reheat quickly in a toaster oven.
1 egg
1-1/4 cups milk
1/4 cup butter, melted
1-1/4 cups flour
1 tablespoon sugar
1 tablespoon baking powder
1/2 teaspoon salt
Beat together the egg, milk, and melted butter. In a separate bowl, combine dry ingredients. Add liquid ingredients and stir together until flour is moistened. Fry on seasoned griddle (400 degrees F). Turn as the pancakes begin to bubble. Serve with warm maple syrup.
