This recipe comes from folks I knew so long ago. This pie requires no crust, instead it makes its own. It is a one bowl mix-and-pour in. Takes only 5 minutes to get ready for the oven.

This recipe comes from folks I knew so long ago. This pie requires no crust, instead it makes its own. It is a one bowl mix-and-pour in. Takes only 5 minutes to get ready for the oven.
4 eggs
dash salt
2 cups milk
1 cups sugar
1-1/2 tespoons vanilla
2 heaping tablespoons flour
1 cup coconut
Place first 6 ingredients in blender or hi-speed mixer, mix well.
Stir in coconut (note: if using sweetened coconut, use 3/4 cup sugar )
Pour into well-buttered 9-1/2″ pie plate.
Bake at 400 degrees for 15 minutes (375 degrees for glass dish).
Reduce heat to 350 degrees (325 degrees) until brown, about 30 minutes.
Custard will be set, coconut will have come to the top and be toasted.
