I had to make some quick appetizers for Christmas and the grocery store was closed so I used ingredients that I already had in my fridge
1 8 oz. pkg. cream cheese or Neufchatel cheese
4 whole wheat tortillas
3 or 4 slices deli roast beef
3 or 4 slices deli ham
3 or 4 slices deli chicken or turkey
1 tbsp. horseradish
2 tbsp shredded cheddar cheese
2 tbsp hot sauce or to taste
3 tbsp chopped green onion tops
Divide the cream cheese into thirds and soften in a microwave.in separate bowls.
In one bowl add about 2 tbsps. chopped green onion and mix well. Spread a thin layer on one tortilla. Add the ham slices and then cover the ham with the rest of the cream cheese and onion mixture and roll up.
Add horseradish and remaining onion to second bowl and mix well. Spread a thin layer on another tortilla. Add the roast beef slices then the rest of the cream cheese, horseradish and onion mix and roll.
Add hot sauce to taste and shredded cheddar cheese to the cream cheese in the 3rd. bowl and mix well. Spread a small layer on the third tortilla and then add the chicken or turkey. Top with the rest of the cream cheese mix and roll.
Wrap each roll in plastic wrap or foil and refrigerate for at least an hour or two to firm up. When you are ready to serve, remove the wrapping and slice the long roll into 1 or 1 1/2 inch thick slices forming little pinwheel canapes and serve. Can be topped with slices of olives if desired.
