1 cup (2 sticks) unsalted butter – room temp
1 3/4 cup sugar
2 large eggs
3/4 tsp peppermint extract
2 cups all purp flour
1 cup unsweetend cocoa powder
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
preheat oven to 350 deg
Line 2 baking sheets with parchment.
beat butter and sugar until well blended. Beat in eggs and extract. Add flour, cocoa – etc.
Form dough into 1″ balls. Place 2″ apart – flatten balls slightly to 1 1/2 rounds
Bake cookies until edges begin to firm but center still appears soft, about 13 minutes. Cool on sheets 5 minutes. Transfer to racks…
