1/2 cup (1 stick) butter
1-1/4 cups brown sugar
2 eggs, beaten
1-1/2 cups pumpkin, canned or cooked
1-1/2 cups flour
1 tablespoon baking powder
1/4 teaspoon ginger
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 cup walnuts, chopped
Preheat the oven to 400°F. Soften the butter, then cream together the butter with sugar. Mix in eggs and pumpkin. Combine flour, baking powder, spices, and salt and add to the pumpkin mixture. Stir batter, and add nuts. Drop by spoonfuls onto baking sheet. Bake for 15 minutes, or until lightly browned. Makes about 5 dozen cookies.
