This is a recipe from Louisiana.
1 package dry kidney beans
1-pound package smoked sausage
2 smoked ham hocks or 4 smoked turkey necks
1 small onion
1/2 small green pepper
onion salt (to taste)
garlic salt (to taste)
black pepper (to taste)
1 celery stalk
1 tablespoon parsley
1/2 cup ketchup
1 heavy large pot w/lid
can add hot sauce or hot peppers if you like it spicy.
Sort beans (looking for debris like small stones and such). Rinse beans several times. Put beans in large pot and add enough water to cover beans twice. Bring beans and water to a boil, reduce heat, cover and let simmer. Simmer beans, add onion and garlic salt to taste. Add parsley, onion, green pepper and celery. Add smoked meat of your choice. Continue simmering for approximately 3 hours, stirring occasionally to prevent sticking.
When beans are done add 1/2 cup ketchup, chop and add smoked sausage, then simmer for 5 more minutes.
Pour over cooked rice and serve.
